🥘 Ingredients

  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • ⅓ cup honey
  • 1–2 tablespoons hot sauce (adjust to your spice level!)
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon crushed red pepper flakes (optional, for extra heat)
  • 2 cups cooked rice (white, brown, jasmine, or cauliflower rice)
  • 1 cup roasted broccoli
  • 1 cup roasted sweet potatoes or carrots
  • ½ avocado, sliced
  • ¼ cup pickled red onions (optional, but highly recommended!)
  • Greek yogurt or sour cream, for drizzling
  • Fresh cilantro or green onions, for garnish

👩‍🍳 Instructions

  1. Season and Cook the Chicken:In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with garlic powder, smoked paprika, onion powder, salt, and pepper. Sauté until golden brown and fully cooked, about 6–8 minutes. Remove from heat and set aside.
  2. Make the Hot Honey Sauce:In a small saucepan or skillet, combine honey, hot sauce, vinegar, and red pepper flakes. Heat over low until just warmed and slightly thinned. Taste and adjust heat or sweetness to your liking. Pour half over the cooked chicken and toss to coat. Reserve the rest for drizzling.
  3. Assemble the Bowls:In each bowl, layer a scoop of rice, roasted vegetables, and hot honey chicken. Top with avocado slices, pickled onions, and a drizzle of yogurt or sour cream. Finish with a splash of the reserved hot honey sauce and a sprinkle of fresh herbs.
  4. Serve and Enjoy:Serve warm and dig in while everything is perfectly saucy and balanced!
